These folks brought us ramen before it became a national craze. They take all of their ingredients very seriously, honing the art of broth, noodles and the all important flavor, umami. Design your own bowl starting with homemade broth. Next, layer on toppings like pork belly, roasted chicken or even “crack” (aka cracklins). Their bento offerings are all spectacular, too. Sounds a little adventurous, but we promise if you try the octopus salad, you’ll be glad you did.
